Buffalo Chicken Wings with Blue Cheese Sauce
Serves 4
2kg Chicken Wings tips cut off, jointed to individual winglets
120 gr Butter
3Tblsp Tabasco
1 Cup White Wine Vinegar
5Tblsp Hot Sauce (Crystal Brand)
1 tspn Cayenne
1 tspn Paprika
1 tspn Garlic Powder
1 tspn Onion Powder
200gr Blue Cheese
¾ Cup Mayonnaise
¾ Cup Sour cream
Sea Salt
White Pepper
Method
- Turn the oven on at 200 degrees Celsius
- Melt the butter in a large pot. Once the butter I melted add the Tabasco, vinegar, hot sauce, cayenne, paprika, garlic powder and onion powder. Mix well to form the marinade
- Add the chicken wings to the marinade and allow to sit in the marinade for a minimum of 30 minutes, over night is the best
- Place the wings on a tray with the marinade for basting and bake for 20 minutes
- For the sauce place the blue cheese, mayonnaise and sour cream in a blender and blend until it forms mayonnaise type consistency. Season with salt and white pepper
- When the chicken wings are ready, finish them off by browning them under the griller for a few seconds to brown them a little, baste them the pan juices
- Serve on a platter with blue cheese in a side bowl for dipping
I am off to the States for a holiday soon and I’m sharing this recipe with you because it originates from the U.S. but the last time I had them was in Canada, in place called Hooters, a place known for their Buffalo Wings!! Served with a Blue Cheese sauce, they are a tangy, spicy winglets that go perfect with a beer!
